the farm

Everything begins with the land.

The character of Nicolau Eco Farm is written first in its soil. Our work is living ground: richer biology, deeper resilience, better water held in the earth, and a landscape able to answer the seasons on its own.

Vines, animals, grazing, gardens, compost and native bush are not separate systems. They are one conversation.

A vintage should remember where it came from.

Wine begins with place: the winter that came before it, the rain that fell or did not, the decomposed granite beneath the vine.

We work in small quantities and with patience. We do not remove the differences between one year and the next. We keep them.

No intermediary between plant and ground.
The vine speaks for itself.

Our vines grow franc de pied, on their own roots, unirrigated, as they have for some thirty years. Guide carefully, intervene lightly, never rush what needs time.

When the landscape becomes the menu.

The Farm Auberge is where the life of the farm arrives at the table. Not as a concept, but as the natural continuation of the work outside.

The menu follows the farm, not the other way around. What is grown, raised and harvested here, and what the season allows, is what we cook. Intimate, seasonal and rooted in agriculture.

The first seats at the Auberge table will be offered to the Register.

Two off-grid lodges come first: hempcrete, local granite, lime and oak, designed for privacy and a sense of belonging to the landscape rather than simply looking at it. A place to slow down, and to remember how good simplicity can feel.

The first stays will be offered to the Register.

Nicolau Eco Farm opens in stages, and in small numbers. The Register is how we offer each release first: the first stays in the lodges, the first seats at the Auberge table, and each wine as it is ready.

  1. Places are offered personally, by letter, before anything is announced.
  2. Wine is allocated for drinking and sharing, never for resale.
  3. There is no price list here.
